Simple Cinnamon Rolls (vegan option)

Our third year house in Leeds is finally starting to feel a bit more like ‘home’. I ordered some plants to liven up my room a bit – btw eBay seems to be the best place to buy some cool house plants if you need to (way cheaper than those flower delivery companies or trendy plant shops). I was listening to a podcast (‘Suprisingly Awesome’ if you wanna know) recently about the house plant business – apparently there are companies who professionally furnish offices with house plants! They rent the plants out, replace them if they die and choose the right plants for the space. Sounds a bit more sophisticated than how I chose my plants – by knowing the name of ONE (monstera obvs) and then searching through ebay shops which sold them for other plants to buy. I’ve ended up with a string of pearls succulent, a string of hearts plant and a prayer plant! …I really hope they survive the Northern winter..

I’ve also baked a few of times now – some bread, millionaire’s shortbread and THESE rolls. I feel like baking cinnamon rolls is like christening a house haha. They’re just the epitome of comfort for me and probably my favourite baked good. I was gonna add ground cardamom to the dough too but, when it came to making them, I just ended up leaving it out because all I wanted was a super simple cinnamon roll. Speaking of the dough – this is eggless (I used the paste method to replace the need for eggs) and I didn’t use milk or butter in there either just to keep the dough SUPER easy to deal with. I have used melted butter in the filling but if you were to replace that with a slick of refined olive oil or melted vegan butter, you could make the rolls vegan too! P.S. if you wanna reheat one roll, just pop it on a plate and microwave for a minute. I thought this would be too obvious to write but my housemate Cas thought it was a good tip (?) so there ya go.

Simple Cinnamon Rolls (vegan option)

Paste:

3 tbsp wholemeal bread flour
50 g (1/4 cup) water

Dough:

150 g (scant 2/3 cup) lukewarm water*
50 g (1/4 cup) granulated sugar
1 1/2 tsp fast action dried yeast (a.k.a easybake/ instant)
240 g (2 cups) wholemeal (wholewheat) bread flour
160 g (1 1/3 cups) white bread flour (plus more for dusting )
3/4 tsp salt
30 g (2 tbsp) olive oil or rapeseed oil

Filling:

100 g (1/2 cup) melted butter
200 g (1 cup, not packed) light brown sugar
a pinch salt
1 tbsp ground cinnamon

Make the paste:

Place the paste ingredients in a small pot and set over a medium heat. Stir together and cook until very thick. Remove from the heat and set aside to cool.

Make the dough:

In a large bowl combine the cooled paste and lukewarm water. Sprinkle over the yeast and stir into the liquid. Add the sugar, yeast, both flours, salt and oil to the bowl. Stir to get a rough dough then tip out onto a work surface dusted with flour. Knead for 10 minutes, dusting with more flour as needed to stop the dough sticking (but don’t go craaazy on the dusting). Return the dough to the bowl you were using, pour a little oil over the dough in the bowl and turn it to coat. Cover with a tea towel or plastic wrap and set aside somewhere warm for 1-2 hours until doubled in volume. 

Shape the buns:

Dust a work surface with flour and tip the risen dough out onto it. Dust with more flour and gently roll out into an 30 by 40 cm (12 by 16 inch) rectangle. Spoon the melted butter over (reserve some for greasing the baking pan). Mix the brown sugar, cinnamon and salt in a small bowl then sprinkle this mixture all over the buttered dough. Starting at a short end, roll the dough up into a tight cylinder. 

Cut the length into 8 equal pieces, grease a 20cm (8-inch) square or 23cm (9-inch) round pan using the remaining butter. Place the cinnamon rolls cut side up into the pan. Cover loosely with plastic wrap and leave in a warm place for 30 minutes to rise – after 20 minutes, start to preheat your oven to 180 C (350F). 

Bake:

Once the buns have risen, remove the plastic wrap and bake them in the preheated oven for 35-40 minutes until well browned and risen.

-*lukewarm water shouldn’t feel hot or cold, just roughly body temperature– to make vegan: use 1/3 cup 1 tbsp olive oil or melted vegan margarine in place of the butter in the filling.– You can also make life easier by using a stand mixer to make the dough. Just attach the dough hook and follow the recipe on from ‘Make the dough’ using the stand mixer instead of a large bowl. Knead for 6 minutes on medium.

Sweet Potato, Red Onion and Lentil Quesadillas

Back to uni now means back to cooking for myself on the reg which, I have to say, I’m excited about. It was great to have a break from the obligatory cooking over the summer to regain some brain space for new recipes. I do enjoy the relaxing nature of coming back from lectures and being able to linger around in the kitchen, sipping on tea, listening to a podcast and cooking something delicious.
Given that I should be cooking dinner right now (I have to get some butternut squash into the oven, pronto) I’ll keep this post short and sweet! Quesadillas are always a crowd pleaser and are an easy thing to make for dinner when you need something comfort-foody and filling – cos who doesn’t want a pimped up cheese toastie for dinner eh?

Sweet Potato, Red Onion and Lentil Quesadillas

2 medium sweet potatoes (~500g total, peeled)
1 tbsp olive oil
2 red onions (sliced 5mm thick)
salt
1 tbsp balsamic vinegar
1 400g can green lentils, drained
2 tsp ground cumin
½ tsp chilli flakes (or more/less if you want)
juice of ½ a lemon
large handful of coriander (roughly chopped)
200 g cheddar cheese (grated)
4 large wholemeal tortillas
Greek yogurt (to serve)

Bring a medium pot of water to the boil. Cut the sweet potatoes into medium chunks and add to the pot. Bring back up to the boil then leave to simmer for 10 minutes. Once cooked, drain and return to the pot. 

Meanwhile cook the onions: heat the olive oil in a large non-stick frying pan over a high heat. Add the sliced onions to the frying pan of hot oil, season with salt and turn the heat down to low. Cook, stirring often, for about 10 minutes until the onions have softened. Splash in ~60ml of water and keep cooking and stirring until that water has evaporated. Repeat with ~60ml of water again. Once the water has cooked off, stir in the balsamic vinegar and cook until evaporated. Remove the onions to a small bowl. Wipe out the frying pan as you’ll use it for frying the quesadillas soon. 

Add the drained lentils to the pot with the cooked sweet potato. Add generous pinch of salt, the ground cumin, chilli flakes, lemon juice and chopped coriander. Roughly mash and stir together to get a slightly chunky mixture. 

Take one tortilla, spread some of the lentil/sweet potato mixture over one half of the tortilla. Top with some of the caramelised onions and some of the grated cheese. Fold in half and place into the dry frying pan set over a high heat. Cook until golden underneath then flip and cook until the other side is golden brown. Remove from the pan and cut into 3 wedges. Repeat with the remaining tortillas. Serve hot with yogurt for dipping, if desired.

Safer taxis via female-only Uber

Add / Remove Uber may have revolutionized the taxi industry, but there have been a number of assaults and rapes by its drivers, and many passengers — women in particular — feel unsafe using the service. Aiming to rectify this is Chariot for Women, the female-only taxi service that is set to launch in Boston next week. Chariot for Women will only employ stringently background-checked female drivers, and only serve women, children under 13 and trans women. The company was founded by former Uber driver Michael Pelletz, who, after experiencing an unsettling journey one night was inspired to create a rideshare company that prioritized safety. The business will operate through an app, much like its predecessors, but with additional safety features. For example, when a ride is booked both parties will be sent a safe word, and the ride will only start when the driver has said the right safe word. Chariot For Women will also donate 2 percent of every fare to women-based charities. Unfortunately, Chariot For Women’s female-only policies could be problematic in terms of gender discrimination law, especially its pledge to only hire women. Comment accélérer les recherches de son lieu de réception ?

La recherche du lieu parfait, le véritable coup de cœur, est extrêmement chronophage. Mais avant de vous déplacer, mieux vaut passer un coup de fil pour recueillir les premières informations et le cas échéant définir un rendez-vous pour se rendre sur les lieux (indispensable !). Cela vous évitera une perte de temps et des frais inutiles pour les kilomètres parcourus. • Quelle est la capacité maximale de la salle ? Attention, pour un repas assis, debout ou dansant, la place nécessaire ne sera pas la même. Il faut compter 1m² par personne pour un repas assis, 0,5m² pour un diner debout. Notre Traiteur Antillais et Gastronomie Française, saura vous accompagner. • Quel est le tarif ? Pour comparer au mieux deux salles, n’hésitez pas à ramener le prix par convives. Là aussi, le tarif doit être détaillé au maximum. • Quelle est la durée de la location ? A quelle heure la salle sera-t-elle disponible ? Peut-on venir la veille pour décorer ? Vérifiez également le coût de l’heure supplémentaire ainsi que les contraintes comme l’heure à laquelle l’animation musicale devra stopper. • Les prestataires sont-il imposés ? Certaines salles obligent leurs clients à recourir aux prestations d’une entreprise en particulier, avec laquelle ils ont l’habitude de travailler : traiteur, décoration florale, animation musicale. Il arrive que le package soit complet, mais si chaque prestataire est contrôlé, la réelle personnalisation de la fête sera sans doute plus compliquée et la marge de manœuvre très faible. • Est-il possible de prévoir des animations ? Certains lieux ou monuments classés ne se prêtent pas aux pas de danses enflammées. Difficile dans ces cas-là de lancer la soirée sans l’ouverture du bal par la valse des mariés. • Quelle sera la liberté dans le choix de la décoration ? L’agencement de la salle, le choix des couleurs et le dressage des tables seront le reflet du thème du mariage et de la personnalité des jeunes époux. Alors si vous n’êtes pas autorisé à amener vos propres accessoires, pas sûr que l’alchimie se fasse. • Les mariés devront-il partager la vedette ? Certains grands complexes proposent plusieurs salles et donc plusieurs réceptions le même jour. Cette question permettra d’éviter de croiser fortuitement une autre robe blanche. • Peut-on réaliser le vin d’honneur et le repas de noces au même endroit ? Inutile dans ce cas de prévoir le déplacement. Une fois garées, les voitures ne bougeront pas avant l’aube. • Y a-t-il un plan de repli en cas d’intempéries ? Le vin d’honneur en extérieur est très répandu de mai à septembre, mais personne ne peut encore prévoir à 100 % le beau temps le jour des noces, alors mieux vaut être prévoyant et éviter de trinquer sous la pluie. • Existe-t-il des possibilités d’hébergement sur place ou à proximité directe ? Souvent arrosée, la soirée se termine tard et prendre la voiture n’est souvent pas recommandé. Alors si on peut coucher sur place, on va proposer cette solution aux convives. • Peut-on négocier le prix ? Hors saison ou en semaine, les tarifs sont souvent moins chers alors pourquoi ne pas déroger à la règle d’un mariage le samedi ? • Quelles sont les modalités de paiement ? Il est indispensable de faire la différence entre des arrhes et un acompte. L’acompte engage à verser le reste de la somme même en cas d’annulation sous peine de poursuites alors que les arrhes ne l’obligent pas. Il sont généralement compris entre 10 et 50 % de la somme totale.

Passer le devis à la loupe

Une fois la salle de rêve dénichée et la date disponible, il est possible de pré-réserver la salle le temps de confirmer la date avec la mairie et le lieu de culte. Une fois le devis établi et, avant de le signer, assurez-vous des prestations fournies. Les choses vont se corser légèrement car d’un lieu à l’autre les prestations de base varient totalement : location des murs, avec chaises et tables, pour une durée de tant d’heures, avec service ou non, possibilité d’accéder à la salle la veille pour la décorer, nettoyage, etc. Il serait dommage de se retrouver à manger par terre ou à devoir faire le service en robe blanche. Il est donc indispensable de vérifier ligne par ligne les prestations et de s’arrêter sur le prix TTC (toutes taxes comprises) et non sur le montant HT (hors taxes) qui en a déjà induit plus d’un en erreur. Une fois le devis signé et le premier acompte versé, il est enfin temps de prévenir les invités pour la date du grand Jour.
